It’s no secret that we LOVE coconut. Add some excitement to morning routine with our Toasted Coconut Crunch Granola. Perfect on top of oatmeal, smoothie bowls and yogurt parfaits or on it’s own with some coconut milk. We can’t get enough!
3 C. Rolled Oats (not instant)
1/3 C Honey
1/4 C Coconut Oil (melted)
1 C Shredded Coconut (preferably fresh, but dried works too)
1 tsp. Vanilla Extract
1/2 tsp Cinnamon
1/2 C Chopped Nuts or Seeds
1) Preheat oven to 350°F. Mix the rolled oats, shredded coconut and cinnamon in a large mixing bowl. In a separate bowl, stir together the coconut oil, honey and vanilla. Pour this wet mixture into the dry mixture of oats until everything is coated.
2) Spread mixture evenly onto a large baking sheet and place on the middle rack of your oven. Bake for 20 minutes, stir and bake some more until golden brown (usually 5-15 minutes more). You’ll want to keep watch of your precious granola as the coconut can burn easily!
3) By now, your kitchen is probably hugging you with the nutty smell of toasted coconut and warm scent of vanilla. Cool the granola to room temperature and stir occasionally. As it cools, this is when the crunch gets crunchier. Yummy!
4) Store the cooled mixture in a container for up to 2 weeks, but we doubt it’ll stick around for that long once you’ve taste it.
