These little snowballs of energy are the perfect treat when you’re craving something sweet. The holiday season can be a time of over indulgences so let’s keep things on track. These snowballs are completely guilt-free and made with only a few nutrition-packed healthy ingredients.
Ingredients:
1 cup pitted dates
2 lemons, juiced
1/4 cup raw almonds
1/2 cup shredded coconut
1 tbsp chia seeds
Directions:
1) Line a 9×13 pan with wax paper and set aside. In a food processor or high powered blender, chop the raw almonds. Remove the chopped almonds.
2) Add in 1/2 the amount of dates and lemon (juiced) then pulse to combine together. Add the remaining 1/2 of the dates and lemon juice, then pulse everything.
3) Add back in the chopped almonds, coconut and chia seeds and mix until all the ingredients are combined. Add a little bit more lemon juice or water if it becomes dry.
4) Roll into 1 inch balls (approximately 1 1/2 tbsp) and then roll into the coconut. Store in the fridge for about one week, but you’ll love them so much they probably won’t even last!
