Pumpkin Cookies + Brown Sugar Icing

Satisfy your sweet tooth this fall with these delicious pumpkin cookies. They are fluffy, gooey and drizzled with brown sugar icing. What more could you ask for in a fall cookie!?

What You’ll Need:

Cookie Dough 

1) 1 cup butter

2) 1 cup canned pumpkin

3) 1 cup sugar

4) 1 egg

5) 1 tsp. vanilla extract

6) 2 cups flour

7) 1 tsp. baking soda

8) 1 tsp. baking powder

9) 1 tsp. cinnamon

10) 1/2 tsp. salt

Brown Sugar Icing

1) 3 tbsp. butter

2) 1/2 cup brown sugar

3) 4 tbsp. milk

4) 1 cup powdered sugar
Step 1: Mix butter, pumpkin, sugar, egg, and vanilla in a large bowl

img_8302Step 2: Mix all dry ingredients in a large bowl

img_8315Step 3: Mix pumpkin mixture and dry mixture together

img_8333Step 4: Form dough balls on a parchment paper covered cookie sheet

img_8353Step 5: Bake for 11-13 minutes at 400 degrees

Step 6: Mix butter, brown sugar and milk in a small saucepan to create icing

Step 8: Add powder sugar to mixture and whisk until smooth
