Weekend ready and killin’ it on the beach. Living by the sea aint so bad, you guys. ūüėČ Let’s hear it for the beach babes! Here, we stay in our kinis and Pura Vida Bracelets. Grab your shades, beach towel and of course your favorite stack of Pura Vida’s– Now c’mon! Let’s go play in the sand.

Dairy-free Pumpkin Pudding

Fall is always a great time to stay indoors and try out a new recipe. With Thanksgiving only a month away, whip up some Dairy-Free Pumpkin Pudding for an easy and healthy holiday dessert.

Ingredients:

1 can full-fat coconut milk
3 teaspoons gelatin
1 1/4 cup pure pumpkin puree
1/3 cup honey or maple syrup
1 teaspoon pumpkin pie spice

Directions:

1) Pour half of the coconut milk in small bowl and sprinkle the gelatin over top. Allow it to bloom (or soak up the liquid) for 5 minutes.

2) Whisk together the remaining coconut milk, pumpkin puree, honey, and pumpkin pie spice in a saucepan over medium-high heat for 5 minutes.

3) Pour in the gelatin and whisk until completely dissolved. Do not let it boil. Pour mixture into a large heatproof bowl and press a piece of plastic wrap directly on top of the liquid. This will prevent a gelatin ‚Äėskin‚Äô from forming on top.

4) Place it in the refrigerator for 6 hours or until set. The pudding will be almost solid when chilled. Remove the plastic wrap and use hand beaters or a stand mixer to beat for 3 to 5 minutes on high, until smooth and creamy.

Serve with gingersnap cookies or you can use it as a pie filling!

Aloha Energy Bites

What better way to celebrate Aloha Friday than with these yummy Aloha Energy Bites? Packed with the sweetness of pineapple, creaminess of coconut and crunch of macadamia nuts, these healthy snacks will have you hula dancing into the weekend!

Ingredients:
Makes approximately 12 ‚Äď 15 bites
1 cup shredded coconut (divided)
¬ĺ cup coarsely chopped macadamia nuts
¬Ĺ cup chopped dried pineapple (We used unsweetened to control the amount of sugar)
2 Tbsp water
1 serving vanilla protein powder
2 tsp vanilla
2 Tbsp honey (We didn’t add any, but feel free to add some extra¬†sweetness!)

Directions:

1) Combine ¬ĺ cup of coconut and macadamia nuts into a medium bowl.

2) Combine the dried pineapple and water into a small microwave safe bowl and heat for 20 seconds. Remove and allow to cool enough to handle.

3) Add the reconstituted pineapple to a food processor and pulse into a paste.

4) Add the pineapple paste to the coconut and macadamia nuts along with the protein powder, vanilla and honey. Mix to combine. The consistency should be sticky and form a ball.

5) Roll 1 inch balls of this mixture and then coat with the remaining ¬ľ cup of coconut. Place in the refrigerator to set for a few minutes. Store in an air tight container in the refrigerator for up to a week.

Strawberry Coconut Chia Popsicles

Who knew popsicles could be good for you? Hold onto what’s left of summer with¬†these¬†super easy and protein-packed pops.

Ingredients:

Makes 10 servings
2 cups unsweetened coconut milk
4 tablespoons organic chia seeds (We Love Mamma Chia!)
1¬Ĺ cups diced strawberries
1/2 cup shredded coconut
2 tablespoons honey (more or less depending on taste)

Directions:

1) Combine all the ingredients in a bowl with a spout (makes pouring easier).

2) Stir until the chia seeds are evenly spread throughout mixture.

3) Refrigerate for 4 hours or until the chia seeds begin to expand.
4) Pour the mixture into popsicle molds (or plastic cups with a popsicle stick inserted in the middle) and freeze overnight.

Coconut Chai Latte Recipe

A little spice is always nice. Add in some creamy coconut milk and you’ve got a recipe for a great morning! Sip on a Coconut Chai Latte using our homemade¬†chai concentrate and bring some warm sunshine to the start of your day.

Ingredients:
10 Cardamom Pods, crushed
4 Cinnamon Sticks
8 Cloves
1 piece of fresh ginger, peeled and sliced
2.5 C Water
1 Vanilla Bean, cut down center

2 Star Anise
1/2 tsp Allspice
1/4 tsp Nutmeg
5 Black Tea Bags
Small Saucepan
Strainer
Resealable Glass Jar
Coconut Milk

Directions
1) Put everything but the black tea bags into the saucepan over medium-high heat. Once it starts boiling, reduce heat to medium-low, cover and simmer for 15 minutes.

2) Shut off the heat after 15 minutes and add tea bags to the pot. Steep for 5 minutes.

3) Strain mixture into a glass jar and allow to cool completely. Cover and refrigerate.

4) To make a Coconut Chai Latte, mix equal amounts concentrate with coconut milk and heat through. You can also add ice for a cool treat!

Toasted Coconut Crunch Granola

It’s no secret that we LOVE coconut. Add some excitement to morning routine with our Toasted Coconut Crunch Granola. Perfect on top of oatmeal, smoothie bowls and yogurt parfaits or on it’s own with some coconut milk. We can’t get enough!

Ingredients:
3 C. Rolled Oats (not instant)
1/3 C Honey
1/4 C Coconut Oil (melted)
1 C Shredded Coconut (preferably fresh, but dried works too)

1 tsp. Vanilla Extract
1/2 tsp Cinnamon
1/2 C Chopped Nuts or Seeds

Directions
1) Preheat oven to 350¬įF. Mix the rolled oats, shredded coconut and cinnamon in a large mixing bowl. In a separate bowl, stir together the coconut oil, honey and vanilla. Pour this wet mixture into the¬†dry mixture of oats until everything is coated.


2) Spread mixture evenly onto a large baking sheet and place on the middle rack of your oven. Bake for 20 minutes, stir and bake some more until golden brown (usually 5-15 minutes more). You’ll want to keep watch of your precious granola as the coconut can burn easily!

3) By now, your kitchen is probably hugging you with the nutty smell of toasted coconut and warm scent of vanilla. Cool the granola to room temperature and stir occasionally. As it cools, this is when the crunch gets crunchier. Yummy!

 

4) Store the cooled mixture in a container for up to 2 weeks, but we doubt it’ll stick around for¬†that long once you’ve taste it.

Vegan Coconut Mango Pudding

Curb your sweet cravings with our super easy, nutrition-packed, guilt-free Vegan Coconut Mango Pudding. Dessert for breakfast? Yes please!

Ingredients:
1/3 C Chia Seeds
1 C Coconut Milk
1/2 Mango, chopped

Directions:
1) We weren’t kidding when we said this recipe was super easy. Simply combine the chia seeds and coconut milk in a bowl, stir, cover and set overnight in the fridge. The mixture will expand so make sure there’s some room to grow in the bowl.


2) Wake up to a creamy, coconutty, tropical treat that’ll have you questioning whether this is healthy or not. Believe us, it is!

Strawberry Sunrise Oatmeal

Sometimes the toughest part of our day is actually starting it. Give your body a hug with a bowl of our scrumptious Strawberry Sunrise Oatmeal and turn a good morning into a great day.

Ingredients:
1/3 C. Quick Oats
1/2 C. Strawberries
1/4 C. Mango
1/4 C. Pineapple

1/2 C. Milk (I like Almond or Coconut)
Coconut Flakes
Chopped Nuts (Almonds, Cashews, Walnuts, whatever!)

Honey
Vanilla Extract

Directions
1) GET OUT OF BED. This may be difficult, but trust me, you’re about to have an amazing breakfast. Grab a bowl, some quick oats and the rest of the ingredients.

2) Microwave the oats and milk. Keep watch¬†so it doesn’t boil over.

3) Stir in a dash of vanilla extract and a squeeze of honey for some sweetness.

4) Top with the strawberries, mango, pineapple, coconut flakes and chopped nuts. Don’t you feel brighter already?

Tropical Green Smoothie Recipe

Transport yourself to the tropics every morning with the simple touch of a button, your blender button that is. This paradise-inspired green smoothie is packed with the sweet taste of sunshine and all the healthy benefits of greens.


Ingredients: (1 Serving)
1 C Unsweetened Coconut Milk
1 C Baby Spinach
1 Ripe Banana 
1 C Pineapple
Ice
Superfood Powder (optional)

Directions:
1) Combine all ingredients in a blender. Start with the coconut milk first, fruit, then spinach and top off with ice.

2) For an extra dash of healthy green awesomeness, add your favourite superfood powder.

3) Set your blender to it’s highest speed until it you can no longer hear the crunching sound of the ice. Switch off your blender.

4) Pour into a coconut (or glass) and serve.
