Toasted Coconut Crunch Granola

March 3, 2015 — by Griffin Thall

6.jpg

It’s no secret that we LOVE coconut. Add some excitement to morning routine with our Toasted Coconut Crunch Granola. Perfect on top of oatmeal, smoothie bowls and yogurt parfaits or on it’s own with some coconut milk. We can’t get enough!

Ingredients:
3 C. Rolled Oats (not instant)
1/3 C Honey
1/4 C Coconut Oil (melted)
1 C Shredded Coconut (preferably fresh, but dried works too)

1 tsp. Vanilla Extract
1/2 tsp Cinnamon
1/2 C Chopped Nuts or Seeds

Directions
1) Preheat oven to 350°F. Mix the rolled oats, shredded coconut and cinnamon in a large mixing bowl. In a separate bowl, stir together the coconut oil, honey and vanilla. Pour this wet mixture into the dry mixture of oats until everything is coated.

2) Spread mixture evenly onto a large baking sheet and place on the middle rack of your oven. Bake for 20 minutes, stir and bake some more until golden brown (usually 5-15 minutes more). You’ll want to keep watch of your precious granola as the coconut can burn easily!

3) By now, your kitchen is probably hugging you with the nutty smell of toasted coconut and warm scent of vanilla. Cool the granola to room temperature and stir occasionally. As it cools, this is when the crunch gets crunchier. Yummy!

4) Store the cooled mixture in a container for up to 2 weeks, but we doubt it’ll stick around for that long once you’ve taste it.

Chocolate Covered Heart Strawberries

February 10, 2015 — by Griffin Thall

23.jpg

Trade that boring box of chocolates for this healthier sweet snack. Feeling loved is all about feeling special, so spend some quality time making these with your boyfriend, BFF, girlfriend or Grandma this Valentine’s Day.

Supplies:
Strawberries
Semi-sweet Chocolate Chips
Small Knife
Microwave-safe Bowl
Wax Paper

Directions:
1) Wash and dry the strawberries. Cut a “V” into the top of each strawberry, then cut in half so the strawberry can lay flat.

2) Put a handful of semi-sweet chocolate chips in a microwave safe bowl. Set your microwave’s power level to 50%. Microwave for one minute at a time, stirring often. This is an important step to avoid burning the chocolate. The residual heat will continue to melt the chocolate. Stir, stir, stir until smooth!

3) Time to skinny dip!

4) Lay them flat on wax paper and refrigerate for an hour. Then grab a loved one, press play on a mushy chick flick, snuggle under a blanket and enjoy!

Send some sweet love to your Valentine by sharing this post with them.

Guppie the Puppie’s Arrival

September 25, 2014 — by Griffin Thall

10683754_287216471476693_196758797_n1-633x391.jpg

In honor of our newest office mate arriving at Pura Vida recently, this post is all about man’s best friend. From the accessories that your dog just NEEDS to a healthy recipe you can whip up for them, we’ve got you covered. Oh and you get to meet Guppie too!

Baby’s 1st Photos

Your dog should obviously be the most stylish pup on the block, so in order to ensure this here are some accessories that should do the trick.

7 Pet Accessories your Dog Needs

1. These beach inspired dog toys (Harry Barker)

2. This ombre collar / leash set (Found My Animal)

3. This fashionable dog carrier for the days you just can’t bear to leave them behind (Found My Animal)

4. This dog bed that won’t completely clash with your decorating style.

5. These swedish dog food canisters that actually look nothing like a dog food canister (Cloud7)

6. And this adorable french bulldog puppy pillow because why not? (Cloud7)

Your mouth waters everytime you pass by a bakery with tempting delectables in the window, so why should your pup not feel the same way? Give him a special (and healthy) treat every now and then, and watch him fall in love right before your eyes.

A Healthy Treat :
hhh

Peanut Butter Pumpkin Dog Treats
(Recipe from: My Baking Addiction)
h
Ingredients
1 cup pumpkin puree
2 eggs
1/2 cup oats (optional if your dog is on a grain free diet, sub an extra 1/4 cup grain free flour)
3 cups whole wheat flour, brown rice flour, or gluten free flour
3 Tbsp of all natural peanut butter
1/2 tsp cinnamon (optional)
h
Directions

Preheat oven to 350 degrees F.
In small bowl, stir together the flour, oats, and cinnamon
In a separate large bowl, whisk together the eggs, pumpkin and peanut butter until combined. Stir wet ingredients into dry.
Pour onto a floured surface and roll dough out to 1/2 thick. Cut out using cookie cutter. The dough will be a little sticky, a dusting of flour for your hands and the rolling pin will help! Bake for 30 to 35 minutes until golden brown.
Place on cooling racks and let cool thoroughly. They will harden as they cool.

Enjoy!
