Chicken Tortilla Soup Recipe

Soup weather is approaching fast! Enjoy this yummy tortilla soup recipe this fall season. Love, the Pura Vida team.

What you will need:
-Cooked chicken ( 2 cooked shredded chicken breast)
-Black beans (1 1/2 cups)
-Olive Oil (2 -3 teaspoons)
-Green bell pepper (1/4 cup)
-Red bell pepper (1/4 cup)
-Jalapeno pepper (seeded and chopped)
-White Onion
-Can of diced tomatoes (15 oz.)
-Lime Juice (1 small lime)
-Chicken Bouillon (2 tablespoons)
-Cumin ( 1 1/2 teaspoon)
-Chili powder or taco seasoning (1 teaspoon )
-Garlic clove (half a clove)
-Water (5 cups hot water)
-Salt (to taste)

For the toppings:
-Corn Tortilla strips
-Diced avocado
-Shredded cheddar cheese

img_2721Step 1) Add olive oil to the bottom of your pan to medium- high heat. Add chopped bell peppers, onion, Jalapeno, garlic clove, and a dash of cumin powder. Cook a few minutes until soft.

img_2725Step 2) Add cooked chicken in with your veggies.

img_2726Step 3) Add all of your seasonings minus chicken bouillon. Cumin powder, chili powder, or taco seasoning. Whatever you choose to use to give that chicken tortilla flavor.

img_2723Step 4) Add 15 oz can of diced tomatoes.

img_2730Step 5) Add in 1 1/2 cup black beans

img_2731Step 6) Add 5 cups warm water to pan

img_2735Step 6) Squeeze in a lime

img_2739Step 7) Stir all ingredients. Add in chicken bouillon seasoning. Continue to stir. Bring to a boil

img_2741Step 8) Reduce heat, place a lid on your pot, and simmer about 30 minutes!

img_2742Step 9) Prepare your topppings! Place in your favorite soup bowl and ENJOY!
