Blueberry Lemon Pop Tarts

A breakfast that tastes and looks like summer?! YES PLEASE! We spent our lazy Sunday creating a new breakfast favorite, blueberry lemon pop tarts. Not only do these pop tarts taste incredible, they look so beautiful you wont want to eat them. We promise you should at least take one bite!

What you’ll need:

For the pop tarts

1) 2 cups all purpose flour

2) 2 tablespoons granulated sugar

3) ½ teaspoon salt

4) 1 cup cold salted butter

5) 2 tablespoons heavy cream

6) 2-3 tablespoons ice water

7) 1 cup lemon curd

8) 2 tablespoons heavy cream (for brushing)

For the blueberry icing

9) 1½ cups powdered sugar

10) 2 tablespoons frozen blueberries

11) ¼ cup heavy cream

Get Started:

Step 1: Mix flour, sugar, and salt together in a large bowl

Step 2: Work butter into flour mixture

Step 3: Pour in heavy cream and ice water

Step 4: Mix everything together using your hands

Step 5: Form 2 equal sized dough disks and wrap each with cling wrap

Step 6: Place dough in fridge for at least 1 hour

Step 7: Remove 1 dough disk from fridge

Step 8: Roll the dough out into a 10″ x 13″ rectangle

Step 9: Use a ruler and a knife to cut the 10″ x 13″ rectangle into a 9″ x 12″ rectangle

Step 10: Use a ruler and a knife to cut the 9″ x 12″ rectangle into 9 little 3″ x 4″ rectangles

Step 11: Place rectangles into fridge

Step 12: Repeat steps 7 – 11 for other dough disk

Step 13: Remove the first batch of rectangles (pop tart bases) from fridge and brush the edges with heavy cream

Step 14: Spoon a tablespoon of lemon curd into the center of each pop tart base

Step 15: Place the other rectangles (pop tart tops) over the pop tart bases

Step 16: Press down on the edges with a fork to keep lemon curd inside

Step 17: Bake in oven at 350°F for 30 min

Step 18: Mix powder sugar, crushed frozen blueberries, and heavy cream together in a bowl to create the icing

Step 19: Heat icing mix in microwave for 15 seconds

Step 20: Pour icing over cooled pop tarts and enjoy!

Blueberry Lemon Scrub

After receiving so much love over our pineapple sugar scrub, we decided to share another one of our favorites with you!  Introducing the blueberry lemon scrub!  From the color, to the scent, to your new silky skin, you will obsess over this summery flavor.

What you’ll need:

1) ½ cup coconut oil

2) 1 cup white sugar

3) 1 tablespoon or so of frozen blueberries

4) A few drops of lemon juice

 Step 1: Break down the frozen blueberries

Summer Smoothie Bowl

Fruit is the ultimate snack in the summer heat and smoothies are even more of a dream on a hot day. Who says that making your own yummy treat should be difficult? We’re all about easy-peasy snacking! Today we are going to share with you one simple way  to make your own smoothie bowl at home! Let’s get started.

Recipe one:  Berry Delicious 

1. One frozen banana

2. A handful of spinach

3. A handful of raspberries

4. A handful of strawberries or blackberries

5. A handful or two of blueberries

6. 1 cup of almond milk, apple juice, or whatever liquid you prefer

7. Enough ice to thicken to your liking

Recipe two: Green Goodness

1. One and a half frozen bananas

2. A handful of spinach

3. A handful of chopped kale

4. 1/2 cup of coconut milk

5. 1/3 cup of orange juice (optional)

6. Chia seeds

7. Enough ice to thicken to your liking

Add ingredients individually into blender and puree until desired consistency.  Pour into your favorite bowl.  Easy enough, right?   Now time for toppings!

Add granola to both smoothie bowls.

DIY Moon Phase Wall Hanging

Stay wild moon child! What gypsy wouldn’t want this hanging in their room? It makes for the most perfect, calming finishing touch to your space full of gems and wonder. We’re not sure about you guys, but we adore simple, handmade treasures to decorate with– so we just HAD to create this one. What makes it even better is that almost all the supplies can be found in your craft drawer at home! Want the in on how we did it? Come on, we’ll take you step by step– Follow us!!

What you’ll need:

1) Thin cardboard (we used an empty cereal box)

2) Jute or any sort of string you prefer

3) Scissors, tape and pencil

4) Silver or gold paint along with a paint brush

5) A small rock or heavy bead

6) A twig
 

Get Started:

Step 1:

Start by using your pencil to draw two circles. You may want to use a household item to trace around to form a perfect circle. (We used the base of a candle.)

After you have both circles, you will draw two crescent moons. (If you need to trace thats okay, too. There aren’t any rules to this game… phew!)

Lastly, you will draw the main crescent that will be placed in the middle. This one will have a deeper arch, resembling the letter“C.”

Step 2:

One by one paint each moon. We used silver as the main base coat. After that dried, we went in on top of it and added some gold glitter so it would shine just a bit. But you can do whatever you like.

Step 3:

After allowing the paint to fully dry, tape the jute onto the backs of the cardboard cutouts in correct order to create the phases of the moon! (As shown in the photo below) Make sure to also leave a good bit of leftover jute at the top and bottom.

Step 4:

Tie the rock or bead to the bottom of the jute. This will weigh it down just enough to keep the jute totally straight.

Step 5:

Take the moon phase wall hanging and tie it in the middle of the twig.

After that’s tied, take another strand of jute to create the hanger.

Strawberry Coconut Chia Popsicles

Who knew popsicles could be good for you? Hold onto what’s left of summer with these super easy and protein-packed pops.

Ingredients:

Makes 10 servings
2 cups unsweetened coconut milk
4 tablespoons organic chia seeds (We Love Mamma Chia!)
1½ cups diced strawberries
1/2 cup shredded coconut
2 tablespoons honey (more or less depending on taste)

Directions:

1) Combine all the ingredients in a bowl with a spout (makes pouring easier).

2) Stir until the chia seeds are evenly spread throughout mixture.

3) Refrigerate for 4 hours or until the chia seeds begin to expand.
4) Pour the mixture into popsicle molds (or plastic cups with a popsicle stick inserted in the middle) and freeze overnight.

Summer Fruit Water

Stay hydrated in those sizzling summer heat waves with our refreshingly simple fruit-infused water.

Ingredients:
Watermelon, diced into chunks
Mint
Water or Soda Water
Ice
Portable Drinking Container (We love this leakproof Made by Fressko flask, which comes with a handy infuser, perfect for fruit or tea.)

Directions:
Add the cut up watermelon, mint leaves and ice to your portable drinking container. Fill with water. Easy peasy. Now, drink up buttercup and go seize the day!

Healthy ‘Summer Splash’ Juice

Staying hydrated never tasted so yummy! Blend up our 3-ingredient ‘Summer Splash’ Juice for an instant hit of refreshing tropical sunshine. Here’s how:

Ingredients:
3 C Watermelon
1 C Pineapple
1/4 C Cucumber
Coconut Water (optional)

Directions:
1) Peel and chop everything so it can fit into your blender.

2) Drop in the watermelon first, then pineapple and cucumber last.

3) Whiz up everything until juicy smooth. Add a splash of coconut water to get the mixture going if necessary. If you’re blender comes with tamper (like Vitamix), use that to push down the ingredients while the blender is on. Don’t attempt this with just any regular spoon!

4) Now go outside, walk barefoot through the green grass and sip on your Summer Splash under the sunshine!
